It’s time to wrap up our cinco dias of low-calorie Mexican recipes, so naturally we’ve gotta end it with dessert!

We’ve enjoyed cheesy guacamole, restaurant style salsa, vegetarian 7-layer tostadas, southwestern stuffed mini peppers, and fajita chicken, so now it’s definitely time for some sweets! And since we didn’t break the caloric bank with these dishes, we don’t want ruin it with a high calorie dessert.

These banana “churros” were perfect because you get all the flavoring of a churro without all the calories. What more could you want out of a Mexican themed dessert?

BANANA “CHURROS”

I love making fruit based desserts because they’re so naturally sweet already that they don’t need much help to be converted into a dessert. I also love finding new recipes for ripe bananas because I don’t particularly like them at that stage, but I also hate wasting food. I love my skinny blueberry banana muffins, but I like to change it up!

This dish is very similar to roasted plums and peaches, and even simpler to make. All you have to do is heat a skillet over medium heat and spray with cooking spray. I used a cast iron skillet because I knew this dish would get sticky!

Combine 2 Tbsp of sugar and 1 tsp of cinnamon together. Mix well and set aside.

Slice bananas into rounds (I recommend using this Banana Slicer

because ain’t no one got time to use a knife) and place them into the skillet.

Allow banana slices to cook for 2 minutes then sprinkle with half of the cinnamon sugar mixture. Cook for an additional minute then flip.

Sprinkle on the remaining cinnamon sugar mixture and allow the bananas to cook for another 2 minutes, until soft.

Serve immediately and enjoy!

Instructions

  1. Heat a skillet over medium heat and spray with cooking spray.
  2. Combine sugar and cinnamon together, mix well and set aside.

Low-calorie banana bread recipe is only 74 calories per slice. It’s great for breakfast, snack, dessert, or whenever the mood strikes.

Banana bread is one of my favorites and this recipe is lower in calories than most. My biggest advice when making banana bread is to use well-ripened bananas because their sweetness and moisture affect the taste and texture of the bread. The riper the banana the better it will be for bread making. The banana should look like it’s almost rotten with brown spots because it will be sweeter and will work much better with this texture.

What is a banana?

As surprising as this may sound, bananas are considered berries. Bananas develop from a flower with a single ovary and have a soft skin, fleshy middle and small seeds. As a result, they meet the requirements of a berry and can be considered both a fruit and berry. A bunch of bananas is called a hand, and a single banana is a finger. Ecuador is the leading producer of bananas worldwide, followed by the Philippines.

Are bananas healthy?

Bananas are high in potassium, antioxidants and fiber. They can also be a good way to get magnesium and vitamins C and B6.

To make the bread, start by preheating the oven to 350 degrees. Then, spray two mini-baking pans with non-stick cooking spray. Set those aside, then in a medium sized mixing bowl, add all the ingredients except the flour. Gently mix by hand until everything is mixed and the batter is smooth. Next, add in the flour and stir until combined. Divide the batter between the two baking pans. Bake for 20 minutes, or until golden brown. Let the bread cool, then cut each loaf into 6 slices. Enjoy!

For a little more flavor to the bread you could also add in some chocolate chips.

How do I store banana bread?

Wrap banana bread in plastic wrap, tin foil, or an air tight container. It will last for about 1 to 2 days at normal room temperature, and up to about a week by refrigerating it.

Can I freeze banana bread?

Yes! Wrap banana bread tightly in plastic wrap or place in an air tight container. It will maintain best quality for about 2 to 3 months in the freezer.

Tip: If you ever have overripe bananas that you aren’t yet ready to eat, don’t throw them away, even if they’ve turned brown. You can absolutely freeze bananas for later use. Simply peel, cut into a few pieces, and freeze in a single layer in an airtight container. The frozen bananas are great for making banana soft serve, or you can thaw them and use in baked goods as well.

Or heat the ripe banana until it’s all nice and caramelized–I call this The Melted Banana Trick–then stir into oatmeal instead of sugar or spread on toast to make the best peanut butter banana sandwich of your life.

Did you know that banana bread was the most googled food back in 2014? Granted, it’s not longer 2014, but bananas are still ever popular, and one of my favorite fruits to bake with because of how versatile they are.

Before we get into all theses fabulous healthy banana recipes, I want to share a little bit more about bananas, their nutritional profile & what they can do in recipes:

Bananas are an excellent source of potassium, an essential mineral our bodies need to maintain a healthy blood pressure.

Bananas help promote healthy bacteria in our guts. They contain fructooligosaccharides, which are a unique carb that aren’t often broken down by the enzymes in our digestive tract. Instead, they are metabolized by bacteria in our gut, which helps maintain the balance of good bacteria. (Source: WHfoods.com.)

Bananas may taste sweet, but actually have a low GI impact (depending on how ripe they are). They recieve a low rating in the GI scale, which measures the impact of food on our blood sugar.

When’s the best time to eat bananas?

The answer really depends on the situation. If you’re looking to increase your blood sugars quickly and replenish, a very ripe banana is the way to go. If you don’t want the fast hike, you could eat the banana with some nut butter, as the fat will help to slow down digestion. You can also eat the banana when it’s yellow or still slightly green to avoid any blood sugar spikes.

Green(er) bananas contain a high resistant starch, however they can also cause bloating and gas.

Yellow bananas tend to be the best to eat (before they are too ripe). They are digested fairly quickly and easier on the stomach.

If you want to bake with bananas, the best time to eat them is when they are extra ripe with cheetah like brown spots.

Nearly every time I stop by the grocery store, I nestle some bananas into my shopping cart. I try to select a range of colors—some bright yellow, some lime green, some in between—so they’re ready to eat on different days throughout the week.
