10 Healthy but Delicious Cookie Recipes for People With Diabetes

’Tis the season for all things sweet, and for many people, the go-to indulgence is, you guessed it, cookies.

For people with type 2 diabetes, this time of year can present challenges on the sweets front — you want to enjoy the dessert table at your company party or dessert on Christmas Day, but you don’t want to risk spiking your blood sugar.

Rest assured: Living with diabetes doesn’t mean you have to avoid all holiday treats; you just have to get a little creative during your homemade cookie prep.

The traditional cookie recipe calls for ingredients that tend to be off-limits on a diabetes meal plan: refined (white) flour and added sugar. But the good news is there are lower-carb, higher-fiber alternatives that don’t compromise on taste!

As a registered dietitian, certified diabetes educator, and recipe developer myself, I focus on finding ways to adjust my favorite desserts to do just that — because what’s the point in eating a bland cookie? What’s the trick to making recipe swaps work? You have to look for ingredients that maintain the sweet taste and texture of the food. For instance, pureed fruit, such as prunes and bananas, can make the perfect replacement for added sugar. All-purpose flour can be swapped with lower-carb, higher-protein options such as almond flour, coconut flour, or whole-wheat pastry flour.

Sugar-free Sugar Cookies

Sugar cookies are one of the most popular holiday cookies to bake. Parents and kids can team up for a fun baking session – kids love using cookie cutouts! This is a sugar-free sugar cookie recipe that is lower in carbs because it uses Equal instead of table sugar. Use it for Christmas cutout cookies, Halloween cookies and anytime you need to make cutout cookies.

Recipe Yield: 24 servings

Ingredients

  • 1/3 cup unsweetened applesauce
  • 1/4 cup butter, softened
  • 1/4 cup whipped cream cheese
  • 27 packets Equal sweetener*
  • 1/4 cup egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Cooking spray
  • Red and green sugar free gelatin

    *Substitute 1 cup plus 2 tablespoons Equal Spoonful for the packets.

Directions

  1. Beat applesauce, butter and cream cheese in a mixing bowl with an electric mixer on medium speed until well blended.
  2. Mix in Equal, egg whites and extracts until combined.
  3. Gradually mix in combined dry ingredients until blended.
  4. Wrap dough in plastic wrap and refrigerate 1 to 2 hours.
  5. Preheat oven to 350F.
  6. Spray baking sheets with cooking spray; set aside.
  7. Roll out dough on very lightly floured surface to 1/4th inch thickness.
  8. Cut with your favorite holiday cookies cutters. Place on prepared baking sheets.
  9. Sprinkle lightly with gelatin.
  10. Bake 8 to 9 minutes.
  11. Cool on pans 2 minutes.
  12. Remove from pans and cool completely on wire racks.

    Since first posting this recipe, there have been a few updates in the world of sugar free alternatives.
    As a result of those updates, I decided to update this recipe post as well.
    Despite the updated in alternative sweeteners, this has been a popular recipe with my readers.

    If you were to ask a group of people what their favorite cookie is, I would bet that a majority of these people would agree on the chocolate chip cookie.

    While chocolate chip may not be the number one favorite cookie for everyone, I would guess that it would place in the top three for most folks. This could have something to do with the variety of ways that you can make these yummy cookies.

    Perhaps the bigger question to ask a group of people is their favorite way to eat a chocolate chip cookie.
    Some folks like their chocolate chip cookies just out of the oven (raising my hand indeed). Other folks want their cookies firm enough to dip into their glass of milk or other beverage, with no blame passed here.

    This chocolate chip cookie is simply sugar free.

    That means that this recipe has alternatives for the sugar that would normally be added to a chocolate chip cookie. To make this recipe you should use a granular sugar alternative that measures 1:1 with regular sugar in order to keep your ingredient volume intact.

    • Brown Sugar Alternative – 1/2 cup. Use granular that measures 1:1 with sugar in volume.
    • Eggs- 2.
    • Vanilla Extract– 1 teaspoon.
    • Sugar Free Chocolate Chips– 1 bag. Most bags are 8-9 ounces in volume.

    How to make The Best Sugar Free Chocolate Chip Cookies

    • Start by preheating your oven to 350 and prepping a cookie sheet for nonstick (I use parchment paper for an easy clean up).
    • In a medium sized bowl, whisk together the flour and baking soda. Set this bowl aside.
    • Next, in a mixing bowl, cream together the butter and the sugars. I use a paddle attachment and scrape the sides of the bowl as needed.
    • For the next step we are going to add the dry ingredients from the first bowl to the ingredients in the second bowl. To do so, add half of the dry ingredients to the mixing bowl, stir gently and then add the remaining ingredients and stir gently again. Then add the eggs and the vanilla extract.
    • Lastly, fold in the chocolate chips. Bake your cookies for 10-12 minutes or until they begin to brown. Larger cookies will most likely take longer than smaller cookies to bake. Also, some folks prefer their cookies baked longer than others.

        You will need the following ingredients to make these cookies: Peanut Butter, Eggs, Splenda, Vanilla Extract, Sea Salt and Peanuts.

        How to Make Sugar-Free Low Carb Peanut Butter Cookies.

        Preheat oven to 350°. Line a baking sheet with parchment paper.
        In a large mixing bowl, combine the peanut butter, egg, sweetener, vanilla, and salt. Using an electric mixer or by hand, process until smooth.

        • 1/2 cup mashed ripe banana
        • 1/2 teaspoon vanilla extract
        • 1-1/4 cups all-purpose flour
        • 1 teaspoon baking powder
        • 1/4 teaspoon salt
        • 1/8 teaspoon baking soda
        • 1 cup (6 ounces) semisweet chocolate chips

        Step 1: Mix the wet ingredients

        In a small bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, banana and vanilla.

        Step 2: Add the dry ingredients

        These sugar-free chocolate chip cookies are easy to make while also being completely grain-free and sugar-free. They come together in one bowl, take minimal effort to prepare, and are perfect for a quick, healthy treat.

        How to make sugar-free chocolate chip cookies

        Step 1: Mix together the butter and powdered sweetener until the sweetener is almost completely dissolved.

        Tip: If using Erythritol, blend it for a few seconds in a high-speed blender before mixing to prevent lumps in the cookie dough.

        Step 2: Add in the ground flax, water, baking soda, and almond flour and stir together until completely mixed together.

        Step 3: Once the cookie dough has been mixed together, add in the sugar-free chocolate chips. Fold them in gently until they are distributed evenly throughout the dough.

        Step 4: Form the dough into cookies and place on a baking tray lined with baking paper. Bake for 15 minutes at 325F (160°C) until they start to brown and become golden.

        Step 5: Remove from the oven and allow to cool for 10 minutes on the baking tray. Then, remove from the baking tray and allow to cool for a further 10 minutes on a cooling rack.

        Step 6: Serve the cookies immediately or store in an airtight container for later. They will keep well for 5 – 7 days.

        Making the perfect sugar-free chocolate chip cookies

        Using granulated sweetener that is then powdered in this recipe is important as it helps the cookie melt in the oven and then firms up once cooling. You can use any granulated sweetener like xylitol, granulated stevia or erythritol. The closer the sweetener is to a 1:1 ratio to normal sugar, the better the chocolate chip cookies will come out. Powdered or liquid stevia would definitely change the structure of the cookies quite a bit, making them more crumbly and dry.

        You can use whatever low-carb chocolate chips that you prefer in this recipe. They should preferably be able to melt slightly while baking to make these sugar-free cookies gooey and chocolatey.

        Using an ice cream scoop or tablespoon measure to measure out the final cookie dough works great for this recipe. You can then shape the cookies to be more round and even by pressing them down with your palm or a fork.

        Using sweetener in a baking recipe usually means that it will bake more quickly than usual. So to avoid the cookies burning, the temperature is slightly lower than normal at 325F. The recipe states a cooking time of 16 – 19 minutes as everyone likes their cookies a different texture whether that’s more gooey than crunchy or more cakey than crispy.

        These sugar-free chocolate chip cookies come out of the oven very soft and need to cool on the tray before handling. They should then further cool to allow them to fully firm up and not fall apart upon eating. It’s well worth the wait though! The cooled cookies will be crunchier on the outside and softer in the center, just like a chocolate chip cookie should be.
